Kicking things off in Cornwall, Kate meets Caro and Tim, who five years ago started free-diving for seaweed to sell to restaurants.
Its popularity as a superfood has grown and Kate joins them on a dive for sea spaghetti and later tastes dried red dulse, or ‘vegan bacon’. The couple now have to decide if they can scale up by cultivating seaweed.
Kate also meets duck breeders Tanya and Robert, and two friends who’ve turned their passion for flowers into a blossoming career in wedding bouquets. Continues all week.
