With flavour themes like ‘English country garden’ and shapes from bananas to gondolas in the mix, there’s enough to keep the chefs busy… but they’ve only got two hours to produce 36 of each dessert!
And that’s before they tackle the showpiece challenge – a huge croquembouche that should show off their skills in sugar work, fillings, nougatine and choux pastry.
