Gino D’Acampo continues his travels in the north, visiting Trentino Alto Adige – a ‘fairy-tale’ region bordering Austria and Switzerland, with castles, lakes and snowy mountains.

Gino stops off at a dairy farm and tries his hand at cheese-making, which inspires a pasta recipe topped with the cheese.

He’s also on a mission to find out the secret ingredient in the local cured ham, and makes a traditional dessert – a no-bake Amaretto apple strudel.
