Nigel is on a three-part adventure to explore traditional home cooking in the Middle East.

He begins in Beirut during Ramadan. After dark he discovers delights including a sharing dish called fatteh which, Nigel says, is one of the best things he has ever eaten.

Inspired by his journey Nigel cooks a fragrant rice pudding, a classic salad called fattoush and a za’atar roast chicken.
